French refit for Bourbon & Beefsteak ... Sailors Thai in Macleay Street gets the wine bar treatment ... Some locals are peeved

SIMON Chung's Coogee Bay Hotel group has consolidated the Darlinghurst Road sites of the Bourbon and Beefsteak and neighbouring Swans Club and is in the process of revamping the premises into a "French Colonial" themed bar, nightclub and restaurants. purchased the properties two years ago for a snip - $22 million. 

The new outfit will be known as The Bourbon. 

A spokesmodel hastens to add: 

"There are no plans for a big nightclub style of venue." 

Is this then a small, nightclub, bar and eating hall on a huge site? 

In October 2008, the Coogee Bay Hotel was in the headlines after a family found excrement in a complimentary chocolate gelato sundae.

AROUND the corner and down the road the lads behind Surry Hills' Bentley Restaurant & Bar have taken out the lease on the long vacant Sailors Thai site in Macleay Street. 

It will transmogrify into a wine bar, with lots of food - but not the nitrogen fuelled Heston Blumenthal style dishes with which the Bentley used to experiment. 

Already we have seen snitty little notes pasted in apartment foyers from aggrieved locals: "Thanks Clover, another bar." 

Actually, this redevelopment does not involve a new liquor licence at all. 

The wine bar, to be known as Monopole, should be a welcome addition to Macleay Street - in our humble opinion.
